Wahoo

Wahoo (Acanthocybium solandri) fish can be found worldwide in tropical or subtropical seas. Perfect for game fishing due to its speed and high quality flesh. Also referred to in Hawaii as Ono, the Wahoo is characterized by its white to grey flesh and is usually commercially fished as a by catch when longlining for Tuna. The flesh has moderate- to high fat and is fine, white (with a little red), and slightly sweet. It is served preferably baked, broiled, or grilled.
