Information
Wahoo (Acanthocybium solandri) fish can be found worldwide in tropical or subtropical seas. Perfect for game fishing due to its speed and high-quality flesh. Also referred to in Hawaii as Ono, the Wahoo is characterized by its white to grey flesh and is usually commercially fished as by-catch when longlining for Tuna. The flesh has moderate- to high fat and is fine, white (with a little red), and slightly sweet. It is served preferably baked, broiled, or grilled.
